Short Order Cook, Anyone?

After a long day yesterday here in the salt mines, I got home and started trying to put together a healthy, ketoflex dinner for M and myself. With our younger son home, we’ve been going out to eat WAY too much and we need to get in the habit of eating at home.

The first thing I did was to wash and dry some kale to make kale chips. My first try at these, so I seasoned them with olive oil, salt, garlic powder and a little seasoned salt. They were nice and crispy, and had a good initial flavor but

OH MY GOSH, DID I PUT TOO MUCH SALT ON THEM!!!

Note for the future: I probably don’t need to add salt AND seasoned salt.

So, those were inedible. And were thrown in the trash.

Still, they took time and effort and I was annoyed that I had wasted both doing that while M just sat there, watching me, to see what I was going to offer up for dinner.

Next came a frittata. I sauteed fresh spinach leaves in olive oil with garlic and onions. Once they were wilted, I added eggs, along with salt and pepper (not so much salt this time!!) and then put the pan in the oven to bake the eggs. It was very tasty and filling.

Of course, it would have been better with cheese and sausage, with a side of grits and toast. But that’s not how we’re eating now.

M said it was “okay.”

By the time we got that eaten and all the dishes cleaned up, it was nearly 8 pm. I don’t think I had sat down since I walked in the house, right before 6.

Now, it was time to get the smoothies together for the next day. I was blending up M’s smoothie (still using the food processor because the rubberized plastic ring hasn’t arrived for the blender yet) when something “caught” in the blades and it broke.

So tonight, I’m going to get a Magic Bullet mini blender for $20 and be done with it.

I’m reading more and more about diet and how it links to dementia. I hope we might be on the right path to turning things around.
